I am breaking in a new stone Molecajete purchased at our Mexican Bakery and about nine inches in Diameter. You do that by grinding rice in it .. a spoonful at a time and then wash and let dry, which takes a long time. I paid about $24 for mine and looked through all they had to get the best one.

Do this about five or eight times and when you are about ready to throw it out .. it is broke in enough not to throw little chunks of rock into your food.

Now .. take a Diana Kennedy sauce and grind up the tomatoes, avocado, onion, cilantro, etc. to a rough grind with texture and spread over a corn tortilla fried in corn oil on each side for about a minute. I can eat about ten of these as fast as I can make them .. right now .. I just slice up the tomato etc. and put on there.
